Smokey Smothered Chicken with Roasted Pepper Gravy

Meat, potatoes, and greens… the most classic meal if I do say so myself. This recipe has a fun twist because of the smokey and spicy flavors the peppers bring. Not to mention, it’s done on the stove in about 20 mins. The perfect recipe when you need a quick, but satiating meal.

  • Vegetables - Yellow Onion, Shallots, Garlic, Roasted Red Peppers

  • Seasonings - Salt, Paprika, Garlic Powder, Onion Powder

  • Pantry - Olive Oil, Flour, Chicken Broth

  • Dairy - Butter,

  • Protein - Chicken Thighs

  • Herbs - Thyme

Smokey Smothered Chicken with Roasted Red Pepper Gravy

A hardy, decadent dish that will leave you feeling satisfied. Pair with your favorite sides to make it a meal!

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 yellow onion, diced fine
  • 1/4 cup roasted red peppers, diced
  • 1 garlic clove, minced or grated
  • 2 tbsp flour
  • 2 cups chicken broth
  • fresh thyme

Instructions

  1. Mix the salt, smoked paprika, garlic powder, onion powder, and paprika togehter. Coat the chicken with the seasoning and heat the olive oil on medium low in a frying pan. Cook the chicken for about 5 minutes each side. When there is about 2 minutes left of cooking, add the butter to the pan to melt. Spoon the butter over the chicken to baste it and then remove chicken from the pan.
  2. In the remaining butter, add the onions, roasted red peppers and garlic. Cook until the onions have softened and then sprinkle on the flour. Mix and cook the flour down for a couple minutes.
  3. Start to add in the chicken broth 1/2 cup at a time. Whisk or mix until the gravy starts to thicken before adding in the next 1/2 cup. Once all the chicken broth is added, add the chicken thighs back in the pan to finish cooking. Within another 2-3 minutes, the chicken should be done and the gravy is thickened. Sprinkle on the thyme before serving.
