Peanut Soba Stir Fry

Saucy soba noodles paired with stir fry veggies and tossed in a sweet and savory peanut sauce!
Stir frys are one of my favorite meals to make when I’m pressed for time, want something comforting but also be packed with protein and veggies. These soba noodles make for the perfect vehicle for this decadent, delicious sauce and still holds up to all the veggies mixed into it.
I used bell peppers, broccoli, and carrots in my stir fry but there are so many other veggies I love to add to the mix: snap peas, green cabbage, or bok choy are just to name a few! I topped the dish with crushed peanuts, green onions and sesame seeds.

Vegetables - Bell Pepper, Broccoli, Carrots, Green Onion
Seasonings - Salt, Garlic
Pantry - Olive Oil, Soba Noodles, Peanut Butter, Soy Sauce, Oyster Sauce, Sesame Oil, Chili Garlic Sauce, Honey, Rice Vinegar, Peanuts, Sesame Seeds

Peanut Soba Stir Fry
Ingredients
- 8 oz soba noodles (I used Trader Joe's Thai Wheat Noodles)
- 1/2 cup mini bell peppers, sliced
- 1/2 cup carrots, sliced
- 1/2 cup broccoli, chopped
- 1 tbsp olive oil
- 1/2 tsp salt
- Toppings: peanut, green onions, and sesame seeds
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp chili garlic sauce
- 2 tsp honey
- 1/2 tsp sesame oil
- water to thin if needed
Instructions
- Heat the olive oil in a large pan and sauté the peppers, carrots and broccoli until soft.
- Combine the ingredients for the stir fry sauce until you get a smooth sauce.
- Cook the soba noodles according to package directions.
- Add the noodles to the pan with the veggies and then pour the stir fry sauce in. Toss until fully incorporated.
- Top with green onions, sesame seeds and peanuts. Serve and enjoy!
