I took all my favorite avocado toast toppings and combined the perfect flavors into a full & nourishing bowl. It’s filled with nutrients, protein, good fats, and is beyond delicious.

Here are the Ingredients for this Avocado Toast Bowl:

  • Vegetables - Arugula, Cherry Tomatoes, Avocado

  • Seasonings - Salt, Pepper, Everything but the Bagel Seasoning, Chili Crunch Oil

  • Protein - Eggs

  • Pantry - Brown Rice, Olive Oil, Breadcrumbs

  • Dairy - Cottage Cheese

Avocado Toast Bowl

Avocado Toast but in bowl form! This recipe takes all your favorite avocado toast toppings but into a nourishing, filling bowl.

Ingredients

  • 1/3 cup cottage cheese
  • 1/2 cup brown rice, cooked
  • 1 cup arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1 egg
  • 1/4 cup panko breadcrumbs
  • 1 tbsp everything but the bagel seasoning
  • 1-2 tbsp chili crunch oil
  • salt - see directions
  • pepper - see directions
  • olive oil - see directions

Instructions

  1. Cottage cheese - whip the cottage cheese for 3 minutes in food processor with a 1/2 tsp olive oil until it’s smooth and fluffy.
  2. Brown rice - heat a pan on medium high with 1 tbsp of olive oil. Add brown rice and cook for 5 minutes until crispy.
  3. Arugula - toss the arugula and cherry tomatoes with 1 tsp olive oil and a pinch of salt and a pinch of pepper.
  4. Jammy eggs - bring a pot of water to a boil and carefully add in your egg. Cook for 6 1/2 minutes and then put in an ice bath. Peel and cut in half.
  5. Toasted breadcrumbs - add 1 tsp of olive oil in a pan and add the breadcrumbs. Cook until golden brown drain with salt and pepper.
  6. Assemble - on the bottom of the bowl, spread the whipped cottage cheese. Then the brown rice, arugula and cherry tomatoes, avocado, jammy eggs, breadcrumbs, everything but the bagel seasoning, and chili crunch oil.
  7. Serve with a sprinkle of salt and pepper and enjoy!
