Paradise Ramen

This is my favorite ramen I’ve ever made! It’s so simple, super creamy and spicy! When the weather gets colder, this is the only thing I crave!

The trick to getting this ramen so creamy is using peanut butter, tahini, and an egg. Not the soft boiled egg you put on top of the ramen, but the one you whisk and coat the noodles in to get this broth extra extra creamy. I love to top mine with fresh herbs, green onions, and a shallot garlic chili oil.

Paradise Ramen

(serves 1)

ingredients:

  • 1 ramen square

  • 3 cups water (for boiling noodles)

  • 2 eggs

  • 1 tsp olive oil

  • 1/2 tbsp butter

  • 1 clove garlic, minced

  • 1/2 tsp ginger paste

  • 2 tbsp soy sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp peanut butter

  • 1 tbsp tahini

  • 1 tbsp honey

  • 1 tsp chili garlic sauce

  • squeeze of sriracha

  • pinch of sesame seeds

  • toppings

    • green onion

    • furikake seasoning

    • sesame seeds

    • cilantro

    • shallot chili garlic oil

      • 1 cup vegetable oil

      • 2 tbsp red pepper flakes

      • 3 shallots, diced fine

      • 3 garlic cloves, minced

directions:

  1. boil the water in small pot. add 1 egg in the pot when it starts to boil. cook for 6 minutes to make the soft boiled egg. remove when done and run under cold water to stop the cooking.

  2. in a small saucepan, add the olive oil, butter, garlic, and ginger. saute for 5 minutes. add in the soy sauces, peanut butter, tahini, honey, chili garlic sauce, sriracha, and sesame seeds. heat on low, whisking frequently.

  3. in the bowl you are serving the ramen in, beat 1 egg and add a pinch of soy sauce. If your ramen has a packet you would like to use, add it to the beaten egg.

  4. after the egg is done cooking, add your ramen in the boiling water. after a couple minutes of the ramen cooking, spoon some of the ramen water into the bowl with the beaten egg. whisk the hot water with the egg. this will help to cook the egg.

  5. once the ramen is done cooking, add the noodles to the saucepan with the peanut butter soy sauce mixture. coat the noodles in this sauce.

  6. next, transfer the noodles into the bowl you are serving them in. let the hot noodles sit on top of the beaten egg for a few seconds, and them toss them together so the noodles are now coated evenly in the egg.

  7. spoon the ramen water into the bowl to create as much broth as you prefer. once you have your desired amount, mix it together slightly to incorporate.

  8. top with the soft boiled egg, and your favorite toppings. mine are listed above!

  9. to make the shallot chili garlic oil, heat the oil in a sauce pan on low. add in the red pepper flakes, garlic, and shallots and cook until the shallots are translucent. transfer to a mason jar for storing.
