True Life: I’m a Crepes Newbie. Yes, it’s true, this was my first time trying crepes. I don’t know how I’ve never had them before, I mean I’ve had plenty of pancakes in my day. Maybe whenever I have the chance I’d rather order pancakes than crepes, but those days are long gone.

When I heard a trick to making a super simple crepe recipe using protein powder, I knew I had to try it out. You simply mix protein powder with eggs and plant-based milk for the batter. Spoiler alert, they turned out AMAZING!

I made these crepes peaches and cream style, but of course you can make them any style you want. I keep dreaming of nutella and banana crepes and how amazing those would be too.

Here are the ingredients you need to make Peaches and Cream Crepes:

  • 1 scoop vanilla protein powder

  • 2 large eggs

  • 2 tbsp almond milk

  • 1 tsp vanilla extract (optional)

  • 2 peaches, sliced

  • 1 tbsp coconut sugar

  • 1 tsp cinnamon

  • planted based whipped topping or cream

  • powdered sugar (optional)

Peaches and Cream Protein Crepes

4 ingredient crepes stuffed with fresh sweet peaches and topped with whipped cream for the ultimate high protein brunch recipe!

Ingredients

  • 1 scoop vanilla protein powder
  • 2 large eggs
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 2 peaches, sliced
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon
  • Planted based whipped topping or cream
  • Powdered sugar (optional)

Instructions

  1. Mix together the sliced peaches with the coconut sugar and cinnamon and set aside.
  2. Whisk the protein powder, eggs, almond milk and vanilla extract.
  3. Heat a nonstick pan on medium low. Once hot, spoon 1/3 of the batter into the pan and spread the batter out thinly and evenly to fry your thin pancake.
  4. Cook until slightly browned, flip and cook for another 2 minutes.
  5. Add your peaches into the crepe and hold in half, and then in half again.
  6. Top with whipped cream and powdered sugar. Enjoy!
