Cassava Flour Chocolate Chip Banana Pancakes

Sunday brunch just got a WHOLE lot better with these gluten free chocolate chip banana pancakes made with cassava flour!

This is the perfect guilt-less breakfast to have on hand. I mean, who can resist chocolate chip and banana pancakes? I certainly can not. Never have. These are made with cassava flour so they are gluten free, but still taste just as fluffy as the real deal. I like topping mine with more fresh cut bananas always. This time I added some powdered sugar. Usually I don’t go for very sweet breakfasts but I was just craving these I had to! I of course also topped it with some organic maple syrup. I heat it up always before I use it on my pancakes and it makes all the difference.

Here’s what you’ll need for these Cassava Flour Chocolate Chip Banana Pancakes:

  • eggs

  • plant-based milk

  • coconut oil

  • vanilla extract

  • cassava flour

  • baking powder

  • sea salt

  • bananas

  • semi sweet chocolate chips, dairy-free if vegan

I love making pancakes on a weekend morning. I feel like it’s almost therpueatic. It’s a great breakfast to make with the kids, and they are of course totally customizable

 

Cassava Flour Chocolate Chip Banana Pancakes

(makes 8-12 pancakes, depending on size)

ingredients:

  • 2 eggs

  • 1 3/4 cup plant-based milk

  • 2 tbsp coconut oil, melted

  • 1 1/2 tsp vanilla extract

  • 1 1/2 cup cassava flour

  • 1 tbsp baking powder

  • 1 tsp sea salt

  • 2 bananas

  • 1/2 cup semi sweet chocolate chips, dairy-free if vegan

directions:

  1. mash together 1/2 of 1 banana and mix it together with the eggs, milk, and coconut oil. then mix in the vanilla extract. slice the rest of the bananas and set aside.

  2. sift into the bowl the cassava flour, baking powder, and salt. mix until combined.

  3. save some banana slices for toppings, but fold in the rest of the banana slices and all the chocolate chips.

  4. on a greased griddle or large frying pan, add about a 1/2 cup of batter on medium heat. cook for about 5 minutes until bottom side is golden brown, then flip and cook another 4-5. repeat until you use all the batter.

  5. top with the bananas, powdered sugar, and warmed maple syrup. enjoy!
