This quick and easy meal makes week nights so easy and the family so happy! Making the meatloaf in little mini versions makes this meal even easier to plate and they are the perfect serving size. Easily customizable too, make more or less depending on how many people you’re feeding! I paired them with fingerling potatoes and broccolini for a fully balanced and nourishing dinner.
I know what you’re thinking…. meatloaf has a bad rap! I never understood why, because my nonna always made it for us growing up and we LOVED it.. we would literally request meatloaf Mondays. It’s such warm and satisfying meal, I’ll really never get tired of it. Luckily for you guys, I’m giving you my nonna’s recipe so you can start loving meatloaf as much as I do. Customize this sheet pan by adding the vegetables you like.. asparagus, carrots, broccoli, sweet potatoes, mashed potatoes, etc.. the possibilities are endless! Enjoy!

Seasonings - Salt, Pepper, Garlic Powder, Onion Powder
Pantry - Italian Breadcrumbs, Worcestershire, Ketchup, Olive Oil, Honey
Protein - Ground Beef, Egg

Mini Meatloaf Sheet Pan Meal
Ingredients
- 1 lb ground beef
- 1 egg
- ½ lb Italian breadcrumbs
- 1 ½ tsp Worcestershire
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 garlic cloves, minced
- 1 tbsp ketchup
- 1 lb fingerling potatoes
- 1 bunches broccolini
- 2 tbsp olive oil
- ¼ salt
- ¼ black pepper
- 1 tsp garlic podwer
- ¼ cup ketchup
- 1 tbsp honey
- 1 tbsp Worcestershire
Instructions
- Preheat oven to 350 F.
- Combine the ground beef, egg, breadcrumbs, Worcestershire, salt, pepper, onion powder, garlic, powder, minced garlic, and ketchup until fully combined. Divide the mix into 4 equal parts and form 4 loaves.
- Coat the potatoes and broccolini with the olive oil, salt, pepper, and garlic powder.
- Add everything to a greased sheet pan. Combine the glaze ingredients and brush over the meatloaves.
- Bake for 45-50 minutes, removing the broccolini after 30-35 minutes.
