Bucatini tossed in a silky sauce made from slow-cooked, jammy zucchini slices and topped with parmesan!
Some of my favorite pasta dishes of all time are the ones that are made very simply with minimal, but fresh ingredients. This pasta dish is one of my absolute favorites! Not just because zucchini might be one of my favorite vegetables, but because it takes so few ingredients to make a knock-out, 5 star dish like this!

Vegetables - Zucchini
Seasonings - Salt, Pepper
Pantry - Bucatini, Sunflower Oil
Dairy - Parmesan

Bucatini in a silky sauce made of slow cooked zucchini slices and topped with fresh parmesan will be your favorite new pasta dish!
Ingredients
- 6 oz bucatini pasta
- 1 1/2 cups zucchini, thinly sliced
- 1/2 cup sunflower oil or olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup reserved salted pasta water + more 1/4 cup if needed
- parmesan for serving
Instructions
- Cook bucatini according to package directions.
- In a large sauce pan, heat the oil on medium low. Add in the zucchini and stir frequently for 20 minutes.
- Season with salt and pepper. The zucchini should be soft to touch and almost falling apart. This is when they're "jammy".
- When the pasta is almost cooked, add in the pasta water into the zucchini. Stir and cook for another couple minutes. Toss the bucatini pasta into the sauce.
- Top with parmesan and serve.
