Super Green Pasta

A totally gorgeous green pasta that’s light, creamy, and filled with nutrients!

As we know, St. Paddy’s day is right around the corner. But I’m not going to lie, I’m not the biggest fan of the typical food you eat on St. Paddy’s day! So I figure if I can whip something up that’s bright green, it’ll still work, right?

This pasta is absolutely gorgeous! It uses very little ingredients, but we’re getting that vibrant green color from all the spinach we use in the sauce.

Here’s what you’ll need for this Super Green Pasta:

  • pasta

  • garlic

  • milk (regular or plant based)

  • ricotta cheese

  • spinach

  • salt

  • pepper

  • parmesan

  • red pepper flakes

This is probably one of the easiest pasta sauces to make. You’re pretty much blending everything up and adding it to a pan to cook down. You’ll add some more milk, red pepper flakes, parmesan, and pasta water and you end up with a silky smooth, creamy pasta sauce that’s ready in minutes.

 

Super Green Pasta

(serves 2-4)

ingredients:

  • 4-6 oz pasta (can be gluten free or regular)

  • 1 garlic clove

  • 1/4 cup ricotta

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 cups spinach, packed down

  • 1 cup milk, divided in half (plant based or regular)

  • 1/4 cup parmesan

  • pinch red pepper flakes

  • 1/4 cup reserved pasta water

directions:

  1. cook noodles according to packaged directions in salted water.

  2. in a blender, combine the garlic, ricotta, spinach, salt, pepper, and half the milk. blend until smooth and then add to a pan on medium low heat. bring to a simmer.

  3. stir in the rest of the milk and bring back to a simmer. then stir in the parmesan and red pepper flakes. Right before the pasta is done cooking, take out some pasta water and mix that in the sauce.

  4. toss the pasta in the pan with the sauce and finish cooking for another 1-2 minutes. serve and enjoy!
