Italian Sausage Parm-Stuffed Zucchini Boats

so we have another fun, easy weeknight dinner that uses hot italian sausage links. It’s quick, it’s easy, inexpensive, and it’s certainly NOT boring… italian sausage parmesan stuffed zucchini boats!

whenever I make any type of zucchini boat, I always end up wondering why I don’t have them more often. they’re such an easy way to make a low carb dinner but still make something really filling. I was obviously craving italian food the other night so these were the perfect thing to make to satisfy that craving. I decided to keep it on the cheap side and use italian sausage rather than chicken and it ended up being AMAZING! It was like the inside of lasagna stuffed inside a zucchini.

Italian Sausage Parm-Stuffed Zucchini Boats

ingredients:

  • 1/8 cup olive oil

  • 1 diced white onion

  • 1 diced bell pepper

  • 1/2 large diced white onion

  • 3 hot italian sausage links

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 3 zucchini, halved longways

  • 1 cup marinara sauce

  • 1/2 cup shredded mozzarella

  • parmesan cheese

  • 1 handful chopped fresh basil and/or parsley

directions:

  1. preheat your oven to 400.

  2. heat the olive oil and add in the white onion and bell peppers. cook for a few minutes until softened.

  3. add in the sausage and break up. season with the salt, garlic powder, and onion powder. cook until it is no longer pink.

  4. add in the marinara sauce, turn heat to low, and let it come to a slow simmer.

  5. with a spoon, scoop the seeds our of the zucchini halves and create your “boat”.

  6. spray a baking dish and lay the zucchini side by side, scoop side up.

  7. spoon the sausage mixture into each zucchini. top with the cheese and bake for 25ish minutes until cheese is melty.

  8. top with the fresh herbs and more parm, duh.
