Detox Salad

This is the ULTIMATE detox salad filled with so many nutrients, you can’t help but feel like the epitome of health when eating it.
I love a bright, green salad filled all the healthy things. Sometimes I crave a salad like this after a weekend of not really eating the most healthy of foods (aka pizza, pasta, repeat). This salad is loaded kale, broccoli, and cabbage (loaded with antioxidants), grapefruit and lemon (both filled with tons of vitamin C), roasted chickpeas (for a plant-based protein), avocado (for healthy fat), persian cucumbers, parsley and cilantro, and a lemon agave vinaigrette.
Here what you need for this super refreshing Detox Salad:
- kale 
- green cabbage

- apple cider vinegar 
- blue agave 
- dijon mustard 
- salt

Detox Salad
ingredients:
- 1 cup kale, massaged 
- 1/2 green cabbage, chopped 
- 1/2 cup broccoli florets 
- 1/4 persian cucumbers, deseeded and sliced 
- 1/2 grapefruit, peeled and sliced 
- 1/2 can chickpeas 
- 1/2 avocado, sliced 
- 1/8 cup parsley, chopped 
- 1/8 cup cilantro, chopped 
- 1 tbsp + 1/4 cup olive oil 
- 1/8 cup apple cider vinegar 
- 1/2 tbsp blue agave 
- 1/2 lemon, juiced 
- 1 tbsp dijon mustard 
- 1/2 tsp + 1/2 tsp salt 
- 1/2 cracked black pepper 
- 1 tsp garlic powder 
- 1 tsp paprika 
directions:
- to make your crispy chickpeas, drain the can and pat the chickpeas dry. toss in 1 tbsp of olive oil, paprika, garlic powder, and 1/2 tsp salt. air fry them at 400 F for 8-10 minutes, shaking the basket every so often. 
- in a bowl, combine the kale, cabbage, broccoli, cucumbers, grapefruit, avocado, parsley, cilantro, and crispy chickpeas. 
- make your dressing by combining the rest of the olive oil, apple cider vinegar, lemon juice, dijon mustard, salt, cracked black pepper and agave. mix well and toss with the salad. enjoy!
