Crispy Artichokes with Lemon Garlic Aioli
With Mother’s Day right around the corner, I wanted to come up with a new, flavorful appetizer with bursting spring flavors. These crispy artichoke hearts are light and airy but truly come to life with this lemony aioli. I would say they are a package deal!
You know when you eat too many apps and then you’re too full to even enjoy your dinner? That is exactly what I try to avoid when I create an appetizer recipe. Since these artichokes are made in the air fryer, they’re so light so they make the perfect pre-dinner snack. This dish was a hit in our family!
Here are the Ingredients for these Crispy Artichokes and Lemon Garlic Aioli:
Vegetables - Artichoke Hearts, Garlic
Fruit - Lemon
Seasonings - Salt, Pepper
Pantry - Panki Breadcrumbs, Olive Oil Spray, Honey
Dairy - Parmesan, Greek Yogurt, Mayo
Herbs - Sage, Rosemary
Crispy Artichokes with Lemon Garlic Aioli
Ingredients
- 2 cans artichoke hearts
- olive oil spray
- 1 1/2 cup seasoned panko breadcrumbs
- 1/2 cup parmesan, grated
- 1/4 cup mayo
- 2 tbsp plain greek yogurt
- 1 tsp lemon zest
- 1/2 lemon, squeezed
- 1 garlic clove, minced fine or grated
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp honey
Instructions
- Preheat the air fryer at 400 F for 5 minutes while breading the artichokes.
- Drain the artichokes and slice in half. Pat dry and spray thoroughly with olive oil spray.
- In a shallow bowl, combine the panko and parmesan. Toss each artichoke half in the breading and coat each side.
- Align the breaded artichokes in the air fryer basket and spray with olive oil spray once more. Cook at 400 F for 12-15 minutes until artichokes are golden brown.
- Make the lemon garlic aioli by mixing together the mayo, greek yogurt, lemon zest, ,lemon juice, garlic, salt, pepper, and honey.
- Serve the artichokes with the aioli when they are done cooking and enjoy!
