Chicken & Mushroom Meatballs

Flavorful chicken meatballs with mushrooms mixed in and cooked in marinara for an easy, low maintenance dinner recipe!
Meatballs are one of my favorite things to make when I want something low maintenance but still so flavorful and hearty for dinner. I love to sub a classic beef or pork meatball with something leaner, so these Chicken and Mushroom Meatballs are a go-to of mine for a weeknight meal. I sneak so many extra nutrients in here by adding the chopped mushrooms, and they give the meat so much flavor!
Here are the Ingredients for these Chicken & Mushroom Meatballs:
Produce - Mushrooms, Basil
Seasonings - Salt, Pepper, Red Pepper Flakes, Onion Power, Garlic Powder
Protein - Ground Chicken, Egg
Pantry - Breadcrumbs, Marinara, Pasta
Dairy - Parmesan
Chicken & Mushroom Meatballs
Ingredients
- 1 lb ground chicken
- 1 cup mushrooms, diced fine
- 1/2 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- pinch of red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 egg
- 4 tbsp olive oil
- 1 jar of Marinara
- Basil for serving
- Parmesan for serving
Instructions
- Combine the ground chicken, mushrooms, breadcrumbs, egg, salt, pepper, red pepper flakes, onion powder and garlic powder together until fully incorporated.
- Form 2" meatballs (should be between 19-21 meatballs)
- In a large sauce pan, heat the olive on medium heat and add the meatballs. Brown on each side.
- Lower the heat and add in the marinara sauce. Cover and cook for 10-15 minutes until meatballs are fully cooked through.
- Serve over some cooked pasta, parmesan, and with fresh basil over top
