Creamy Sausage & Pea Unstuffed Shells

"Unstuffed" jumbo shells in a creamy pink sauce with sweet Italian sausage and bright green peas!

These unstuffed shells came from the idea of me really wanting stuffed shells, but not wanting to actually take the time to stuff and bake them! So really, just me being my best lazy-girl self.

The sauce is so creamy and I make enough that you can just mix the jumbo shells right into it and the sausage and peas sort of just stuff themselves! I add extra sauce on top and this dinner becomes such an easy, yet fancy recipe to make for guests.

Here are the Ingredients for these Creamy Sausage & Pea Unstuffed Shells:

  • Protein - Sweet Italian Sausage

    Produce - Sweet Onion, Peas

  • Seasonings - Salt, Pepper, Red Pepper Flakes

  • Pantry - Jumbo Shells, Olive Oil, Tomato Paste

  • Dairy - Heavy Cream, Parmesan

Creamy Sausage & Pea Unstuffed Shells

"Unstuffed" jumbo shells in a creamy pink sauce with sweet Italian sausage and bright green peas!

Ingredients

  • 8 oz jumbo shells
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 sweet onion, chopped fine
  • 12 oz ground sweet Italian sausage
  • 2 tbsp tomato paste
  • 1 1/3 cup frozen green peas
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • pinch red pepper flakes
  • 2 cups heavy cream
  • 1/2 cup parmesan, grated

Instructions

  1. Cook jumbo shells according to package directions.
  2. Add butter and olive to large pan and melt butter before adding the onions. Cook on low until onions are soft and translucent.
  3. Add in the ground sausage and crumble as it browns. Stir in the tomato paste, salt, pepper, and red pepper flakes, and peas. Once tomato paste darkens and is coating everything in the pan, slowly add in the heavy cream a little at a time.
  4. When sauce is thickened, add in the cooked pasta shells and parmesan and mix well. Make sure to get the sauce, sausage and peas inside the folds of the shells.
  5. Serve with more parmesan and sauce on top. Enjoy!
