Taking all the best part of the Grinder Italian Sandwich and making it into a delicious and fresh pasta salad!

There is quite literally nothing better than a big, giant sandwich as you lounge on the beach during the summer. I grew up going to my local deli before every beach trip and getting a large roll with all the Italian sandwich, or Grinder sandwich, toppings. It was always the lunch I looked most forward to because it just always hit the spot.

The first pasta salad I made this season was taking that favorite sandwich of mine and turning it into an amazingly simple and delicious pasta salad. It uses Italian deli meat like salami and prosciutto, cubed provolone and parmesan, cucumbers, tomatoes, banana peppers, and sweet papadew peppers. The dressing is a creamy mix of the condiments I usually get on my sandwich, which was always mayo, oil and vinegar, italian seasonings, and salt & pepper. Together, this makes for the perfect summer pasta salad!

Here are the Ingredients for this Grinder Sandwich Pasta Salad:

  • Protein - Salami, Prosciutto, Garlic

  • Produce - Cucumbers, Cherry Tomatoes,

  • Seasonings - Salt, Pepper, Red Pepper Flakes, Italian Seasoning

  • Pantry - Banana Peppers, Papadew Peppers, Bow Tie Pasta, Mayo, Dijon Mustard, Olive Oil, Red Wine Vinegar

  • Dairy - Provolone, Parmesan

Grinder Sandwich Pasta Salad

Taking all the best part of the Grinder Italian Sandwich and making it into a delicious and fresh pasta salad!

Ingredients

  • 12 oz bow tie pasta, cooked
  • 1/2 cup provolone, cubed
  • 1/4 cup parmesan, cubed
  • 1/3 cup prosciutto, sliced
  • 1/3 cup salami, cubed or sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, cubed
  • 1/3 banana peppers, chopped
  • 1/3 papadew peppers, halved
  • 1/2 cup Mayo
  • 2 tbsp dijon mustard
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the pasta according to package directions and bring to room temp.
  2. Add the pasta, cheese, meat, tomatoes, cucumbers, banana peppers, and papadew peppers to a mixing bowl.
  3. Make the dressing by whisking the Mayo, Dijon, vinegar, olive oil, garlic, and seasonings together. Pour over the pasta salad and mix well.
  4. Top with more black pepper and serve or store in air right container for up to 3 days.
