Chipotle Chicken Melt

Panera Bread inspired Chipotle Chicken Avocado Melt was craving this sandwich so much but wasn’t craving the $25 I inevitably spend at Panera.

As a kid, it was a TREAT when my mom would take us to Panera. Now that I buy my own food, I know why! Anyway, I still think about that one chipotle chicken melt they had, it was my go-to. So I decided to recreate it myself!

It’s such a simple recipe, which is great for a quick and easy work from home lunch! It definitely satisfies all my Panera cravings.

Here are the Ingredients for this Chipotle Chicken Melt:

  • Produce - Eggplant, Carrots, Zucchini, Red Onions Garlic, Basil

  • Seasonings - Salt, Black Pepper, Red Pepper Flakes

  • Pantry - Rigatoni, Olive Oil

  • Dairy - Parmesan

Chipotle Chicken Melt

The perfect at home Panera inspired lunch to satisfy all your cravings!

Ingredients

Sandwich
  • 2 slices of sourdough bread
  • olive oil
  • Grilled Chicken
  • Papadew peppers
  • 1/2 avocado
  • cilantro
  • 2 slices of gouda
Chipotle Sauce
  • 1/2 cup mayo
  • 1/4 cup chipotle’s in adobo
  • lemon juice
  • pinch of salt
  • pinch of pepper

Instructions

  1. Blend 1/2 cup Mayo, 1/4 cup chipotle’s in adobo, lemon juice, salt & pepper.
  2. Brush one side of bread with olive oil and toast in pan brushed side down.
  3. Slather each side with chipotle sauce, and then top sandwich with cilantro, gouda, grilled chicken, avocado, & papadew peppers.
  4. Fold sandwich together and continue to heat until both sides are golden and crispy and the cheese has melted.
