Baked Pizza Chicken

Delicious baked chicken drenched in marinara, fresh mozzarella,and pepperoni! And of course topped with basil.
If you know me at all, I’m a BIG pizza girl. I have to say, I crave it almost over any other meal. Even if I don’t crave pizza itself, I crave that pizza flavor of marinara and fresh mozz. And once the summer rolls around and I have fresh basil to use, it’s game over! This is a low carb way to get that delicious pizza flavor using baked chicken breasts. Think of it as a carbless-chicken parm that cuts out on breading but has ALL the flavor. I topped mine with pepperonis but you can add any of your favorite pizza normal you would normally add!
Here’s what you’ll need to make my Baked Pizza Chicken:
chicken breasts
olive oil
salt
pepper
red pepper flakes
garlic power
oregano
marinara
mozzarella
pepperoni
basil
You’re going to cut this chicken breasts in half lengthwise to get them thinner. You can pound the chicken down a little bit if you want a thinner piece also.
After seasoning the chicken (I use salt + pepper, oregano, and garlic powder but feel free to use any other of your favorite seasonings), you’re going to bake your chicken, bur not for the full time. You’ll want to pull it out before its done so you can add the pizza toppings before it’s fully cooked.
I love adding pepperonis to mine to give it a more “pizza” feel. You can add any of your favorite toppings though! I sometimes like adding fresh tomato slices, olives, mushrooms, and other veggies.
