Apple Streusel Pie

Chilly weather is in full swing and I’m craving anything fall flavored. I know you are too, so enjoy this festive fall dessert with a creamy cinnamon apple filling & a buttery streusel topping baked to golden perfection.

One thing about me, I’m definitely more of a cook than a baker. So let that just tell you how simple this recipe really is. HOWEVER, by the way it looks, tastes, and smells everything will think you should be on Great British Bakeoff I promise you. I know it may seem intimidating, but if I can do it, you can too…. it’s an ATOB secret, shhhh!

Here are the Ingredients for this Apple Streusel Pie:

  • Fruit: Apples (mix in variety)

  • Seasonings - Salt, Nutmeg, Cinnamon

  • Pantry - Walnuts, Pecans, White Sugar, Brown Sugar, Vanilla Extract, Flour

  • Dairy - Butter, Coconut Yogurt

  • Protein - Egg

  • Other - Pie Crust,

Apple Streusel Pie

A festive fall dessert with a creamy cinnamon apple filling & a buttery streusel topping baked to golden perfection.

Ingredients

Pie
  • 1 cup Harmless Harvest Organic Coconut Yogurt
  • 3/4 cup white sugar
  • 1 large egg
  • 1/4 cup flour
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 4 cups apples, peeled & sliced 1/4” thick (about 4-5 large apples; used a mix of Granny Smith, Honeycrisp, & Envy)
  • 1 pie crust, unbaked
Streusel Topping
  • 1 cup flour
  • 1/2 light brown sugar
  • 1 heaping tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup pecans, chopped
  • 1/2 cup butter, melted (1 stick)

Instructions

  1. Preheat oven to 350 F.
  2. Whisk the yogurt, white sugar, egg, flour, nutmeg, cinnamon, salt, and vanilla together.
  3. Add in the cut apples and mix until evenly coated. Set aside for at least 30 minutes.
  4. To make the streusel, combine the ingredients listed with a fork to form a crumble.
  5. On a greased pie plate, lay out the unbaked pie crust (should do this step when the dough is at room temperature).
  6. Pour in the apples and all the juices into the pie plate.
  7. Top with the streusel and spread evenly.
  8. Bake for 40-50 minutes until top is golden.
  9. Let the pie sit for at least 30 minutes to get the inside to set before serving.
