Black Bean & Roasted Cauliflower Vegan Nachos

nachos are one of the most satisfying and easy appetizers to make. this recipe packs in the protein and your serving of veggies and is completely dairy free and vegan!

you’re not going to miss the meat in these either, with the seasoned black beans and roasted cauliflower. this takes a total of 15 minutes to make, since it’s mostly just assembling. this recipe can be grain free if you use any of your favorite grain free tortilla chips. I love to also use siete nacho chips instead of these black bean and quinoa chips.

Black Bean & Roasted Cauliflower Vegan Nachos

ingredients:

  • your favorite grain free chips (I love trader joe’s quinoa and black bean chips)

  • 1 cup cauliflower florets

  • 1 can black beans

  • 1/4 cup salsa verde

  • 1/2 cup your favorite vegan queso (I love the siete spicy blanco cashew queso)

  • 1 tbsp trader joe’s everything but the elote seasoning (if you don’t have this you can use a combo of paprika, nutritional yeast, garlic powder, onion powder, cumin, and chili powder

  • 3-4 sliced radishes

  • 3-4 stems of cilantro chopped

  • 1 sliced jalapeno

  • 1 tbsp pickled red onions

directions:

  1. season your cauliflower with the olive oil and elote seasoning. air fry at 375 for 10-15 minutes.

  2. heat the black beans in a pot and season with salt and elote seasoning.

  3. lay out your chips on a plate or tray. layer on vegan queso, cauliflower, black beans, salsa verde, radishes, cilantro, jalapeno, and pickled red onion.
