Seared Scallops With Toasted Breadcrumbs

Scallops seared to perfection in a butter and white wine demi glace and topped with a tasted walnut gremolata. Sounds fancy, but it’s the easiest thing in the world to make!

Scallops are such a treat for me! When I used to think of them, I thought they were wayyy to fancy for me to ever make so I never really tried until recently! They kind of take on whatever flavor you add to them, a lot like shrimp will. I used the classic flavor profile of garlic, butter and white wine to make this demi glace. I added some to the bottom of the dish, added my scallops on top, and then drizzle some more sauce over top before adding the toasted breadcrumb mixture (or a gremolata).

Here’s what you’ll need to make these delicious seared scallops:

  • scallops

  • butter

  • olive oil

  • lemon

  • parsley

  • breadcrumbs

  • walnuts

  • white wine

  • red pepper flakes

  • salt + pepper

 

Seared Scallops With Toasted Breadcrumbs

ingredients:

  • 10 oz scallops

  • 4 tbsp butter

  • 1 tbsp olive oil

  • 1/2 lemon

  • 2 tbsp fresh parsley, chopped

  • 1/4 cup breadcrumbs

  • 2 tbsp walnuts, chopped fine

  • 1/2 cup white wine

  • pinch red pepper flakes

  • salt + pepper

directions:

  1. rinse the scallops and pat them dry with a paper towel. season with salt and pepper on both sides.

  2. in a fry pan, heat half the butter and half the olive oil on high heat. add the scallops face down to sear. cook for 3 minutes, then flip and sear the other side. remove the scallops from the pan and lower the heat. there should be lots of darker brown bits in your pan from heating the butter on high heat.

  3. add in the white wine (it’ll sizzle for sure) and the red pepper flakes. scrape the dark bits from the bottom of the pan. whisk until the sauce starts to blend together. add the other half of the butter and lemon juiced and continue whisking your sauce until it thickens. season with salt and pepper.

  4. in a small bowl, mix the breadcrumbs, parsley and walnuts together. heat the other half of olive oil in a different small pan. toss your breadcrumb mixture in the pan to toast on medium heat. mix around every couple minutes as to not burn. when the mixture it toasted golden brown, remove from the pan (should be about 5-6 minutes).

  5. on your serving plate, spoon some sauce on the bottom. add your scallops on top and then some more sauce. sprinkle the breadcrumb mixture overtop everything and serve!
