Nectarine, Roasted Corn & Goat Cheese Salad

summertime has transformed into a salad with this dish. ripe nectarines, cherry tomatoes, sweet corn, avocado, and the things that holds them all together, honey goat cheese. this dish takes no time to make and is a great summer side salad. we grilled up some steak and had this on the side and it was perfection.
this is also a great summer staple to have because it’s literally no cooking- no oven, no stove, and no time. its also a really pretty salad to make when you need to bring something to a barbeque with friends and want to impress. there aren’t really any real measurements to this since it’s no actual cooking, just chopping and assembling. This allows you to make as much or as little as you want of it.
Nectarine, Roasted Corn & Goat Cheese Salad
ingredients:
1 bunch radicchio
1 bunch arugula
sliced nectarines
halved cherry tomatoes
fresh sweet corn kernels
sliced avocado
honey goat cheese crumbles (you can use regular goat cheese, but the honey goat cheese from trader joe’s is soooo good with this)
classic balsamic dressing:
2:1 ratio of balsamic to olive oil
pinch of sugar or honey
salt
black pepper
directions:
lay your bed of lettuce down and add in all the toppings.
mix the dressing ingredients together and pour over salad right before serving. (see, so easy!)
