Gluten Free Cosmic Brownies

These Gluten Free Cosmic Brownies will take you right back to your childhood, but not bring back any of the guilt!

I used to be OBSESSED with cosmic brownies. For some reason, I’m not the biggest chocolate fan of all time. I never have been. But I was a tried and true Cosmic Brownies fan always. They were so soft on the inside, the frosting was absolutely bomb, and the sprinkles were just a straight up vibe. When I would get one of these in my lunch box, I would literally audibly gasp I’d be so excited.

Here’s what you’ll need for these Gluten Free Cosmic Brownies:

  • semi-sweet chocolate bar (dairy-free if vegan)

  • coconut oil

  • coconut milk (the cream on top of the can)

  • eggs

  • arrowroot powder

  • cocoa powder

  • sugar (can use coconut sugar)

  • vanilla extract

  • sea salt

  • rainbow sprinkles

If you’re craving some snacking brownies you need to try these out! Make your batter and bake it in an 8”x8” pan, that way the brownies come out a little thinner, as Cosmic Brownies would be. Make your chocolate ganache as your brownies are baking, and sprinkle the sprinkles on top before the ganache hardens.

 

Gluten Free Cosmic Brownies

(makes 16 brownie squares)

ingredients:

brownie batter

  • 1/2 semi-sweet chocolate bar (dairy-free if vegan)

  • 3 tbsp coconut oil

  • 2 eggs

  • 1/2 sugar

  • 2 tsp vanilla extract

  • 3 tbsp arrowroot powder

  • 1/4 cup cocoa powder

  • 1/2 tsp sea salt

  • rainbow sprinkles

chocolate ganache

  • 1/2 semi-sweet chocolate bar (dairy-free if vegan)

  • 3 tbsp coconut milk (the cream on top of the can, not the water)

directions:

  1. preheat oven to 350 F.

  2. in a saucepan, heat 1/2 of the chocolate bar with the coconut oil on low while stirring until melted.

  3. meanwhile, mix together the eggs, sugar, and vanilla extract. then stir in the melted chocolate.

  4. add in the cocoa powder, arrowroot starch, and sea salt. stir until batter forms.

  5. add a greased parchment paper sheet to an 8”x8” brownie pan. pour batter into it and make sure the batter is even.

  6. bake for 20-25 minutes until a toothpick comes out clean. make the chocolate ganache in the meantime.

  7. in a small saucepan, heat other 1/2 of chocolate bar and the coconut cream together while whisking on low.

  8. remove brownies when done and let them cool for 10 minutes. spread the chocolate ganache overtop once cooled and sprinkle with the rainbow sprinkles. cut into 16 squares and enjoy!
