You’re Cordially Invited To Taco Night
welcome to taco night friends!! Tacos are one of my favorite things to make when I have people over. They’re so customizable so everyone gets to make it however they want. You can also get crazy with the kinds of tacos you make. I like to go out of the box for taco night instead of the typical beef, tomatoes and cheese.
I’m going to break down how to make an awesome taco night with the types of tortillas, fillings and toppings that’ll up your taco game.
let’s talk tortillas…
The tortilla you use can make or break a taco (or literally break in half). There are so many options to choose from. Do I want flour tortillas? White corn? yellow corn? Extra thin? Grain free? Store bought? Make my own?????

Here are my favorite kinds of tortillas for whichever particular direction you feel like going in.

But maybe you want to make your own…
I never in a million thought I’d have the urge to make my own tortillas. For the most part, they’re so cheap at the store and come in like 30 to a pack. That’s until I actually made my own and found out how easy, fast, and DELICIOUS it was. Using the homemade tortillas was a total taco gamechanger.
homemade flour tortillas
ingredients:
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
2 tbsp olive oil
3/4 cup warm water
directions:
• mix flour, 1baking powder, and salt with a fork in a bowl.
• add in olive oil and water and mix until dough forms
• on a floured surface, knead dough for 5 minutes
• place in bowl and cover with clean dish towel. rest for 30 minutes.
• divide dough into 8 pieces and roll out each one into around 8” tortillas. if you want them extra thin (my favorite) divide the dough into 16 pieces. roll them out just as big.
• place one tortilla at a time in medium high skillet (the tortillas won’t stick to the pan because of the flour).
• after around 3-5 minutes, flip and repeat on the other side.

Here are some of my favorite taco recipes you can recreate with your friends for taco night.
southern bbq tacos
shredded chicken breast
sautéed peeled and cubed sweet potatoes seasoned with garlic powder
sautéed chopped white onion, green cabbage, red cabbage, and collard greens in some olive oil, garlic and red pepper flakes
your favorite bbq sauce (I love Primal Kitchen, Tessemae’s, or Sweet Baby Ray’s when I just don’t give an F).
paleo fried fish tacos
air fried flounder coated in crushed Simple Mill’s Sea Salt Crackers, garlic powder, onion powder, and herbs. air fried at 370 for 10 minutes.
pickled red cabbage
pickled red onion
sliced radish
fresh grilled yellow corn
green onion and cilantro
spicy taco crema: mix together sour cream, taco sauce, lime juice, and smoked paprika
island mango shrimp tacos
arugula
grilled shrimp marinated in Trader Joe’s Island Soyaki
sliced fresh mango
matchstick radishes
salsa verde
creamy jalapeno sauce: blend sour cream, jalapeno, garlic powder, lime juice, cilantro salt and pepper
smoky veggie and black bean tacos
chopped romaine
sauteed zucchini in garlic powder and onion powder

black beans made with smoked paprika, garlic powder, onion powder, and cumin

crispy chickpeas air fried at 400 for 10 minutes and seasoned with paprika, garlic powder, salt and pepper
green goddess crema: blend plain greek yogurt, lime juice, parlsey, cilantro, dill, salt and pepper
