Roasted Red Pepper Chicken Parm

usually when I make chicken cutlets, I make a LOT. like so many that I need other ways to use them. (you can find the chicken cutlet recipe here.) so I can up with a fun way to make a super quick version of chicken parm, but not so heavy and coated in hot tomato sauce.

I’m definitely not knocking on normal chicken parm by any means, but sometimes I want a version I don’t have to sweat in my kitchen to make! this recipe takes 8 minutes to make and uses pantry ingredients - double whammy.

Roasted Red Pepper Chicken Parm

ingredients:

  • chicken cutlets (see chicken cutlet recipe)

  • fresh mozzarella

  • roasted red peppers

  • arugula

  • balsamic glaze (trader joe’s has a great one, or you can make your own)

  • olive oil spray

directions:

  1. spray the air fryer basket with olive oil spray.

  2. layer the cutlets with a slice of mozzarella and a piece of roasted red pepper.

  3. air fry at 400 for 8 minutes until cheese is super melty.

  4. lay some arugula down on a plate, add your roasted red pepper chicken parm on top, and drizzle with balsamic glaze.
