Kale Chicken Caesar Pasta Salad
Kale Chicken Caesar Pasta Salad is what I’ll be eating all summer long! This pasta salad is loaded with Tuscan kale, delicious grilled chicken, crunchy croutons, tons of parm & your fave caesar dressing.
Let’s go ahead an turn two of my favorite foods, kale caesar salad and pasta & turn them into one gorgeous pasta salad! This is the epitome of a summer pasta dish - light, fresh, and satisfying.
I like to cook my chicken on the grill, it adds a nice smokey flavor. However, if you are looking to make this vegetarian, go ahead and leave out the chicken - I promise it’s just as delicious. Instead, you can add some garbanzo beans, cherry tomatoes, or quinoa to bulk this dish up a little! Remember, the best thing about a pasta salad dish like this is that it’s always going to be so customizable. Try it!

Produce - Lemon, Tuscan Kale
Seasonings - Salt, Pepper
Pantry - Rigatoni, Croutons, Olive Oil
Dairy - Parmesan, Caesar Dressing
Protein - Grilled Chicken Breast
Kale Chicken Caesar Pasta Salad
Ingredients
- 8 oz mezzi rigatoni (or your favorite short pasta)
- 1 1/2 cup grilled chicken breast, chopped
- 3 cups Tuscan kale
- 1 cup croutons
- 1/3 cup parmesan flakes
- 3/4 cup Caesar dressing
- 1 lemon, juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1 tsp cracked black pepper
Instructions
- Cook the pasta according to package directions in salted water.
- Chop the kale and add to large mixing bowl. Add the olive oil and salt to kale and massage for 2 minutes.
- Once the pasta is cooked and cooked down, add to the bowl with kale.
- Then add in the grilled chicken, croutons, parmesan, lemon juice, cracked black pepper, and Caesar dressing.
- Mix well and serve or store in air-tight container until ready to serve.
