Garlic Parmesan Radishes with Roasted Garlic Aioli

if you’re not a radish lover, you’re about to converted with this tasty recipe that is so simple and just a few ingredients.

I use radishes all the time when I cook, but rarely did I ever cook them. I usually use them raw and throw them in salads or salsas. roasting them brings the flavor to a whole new level. they get sweet and carmelized but still hold their slight earthy flavor. this recipe is great for both an appetizer or a side dish. the roasted garlic aioli can also be used for so many other recipes and its so simple to make. I use primal kitchen’s avocado oil mayo so its whole 30. you can leave the parmesan off the radishes to also make them whole 30. this will also make the recipe vegan and dairy free.

GARLIC PARMESAN RADISHES WITH ROASTED GARLIC AIOLI

ingredients:

  • 2 cups radishes

  • 1/8 cup olive oil

  • 1 tbsp parmesan

  • 1 tbsp chopped parsley

  • 3-4 large garlic cloves still i the shell

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp pepper

roasted garlic aioli:

  • 1/2 mayo (primal kitchen avocado oil mayo is great)

  • half a lemon juiced

  • 1/2 tsp lemon zest

  • 1/2 tsp salt

  • 1/2 tsp cracked black pepper

  • 1/4 tsp red pepper flakes

directions:

  1. preheat your oven to 425.

  2. slice the radishes in half and toss in a bowl with the olive oil, garlic powder, parmesan, parsley, salt and pepper.

  3. lay them on a baking sheet lined with parchment paper.

  4. scatter the garlic cloves STILL IN THEIR SHELL around the radishes. you are going to roast them in their shell so they get super browned and caramelized.

  5. roast for 20-25 minutes, tossing the radishes halfway through.

  6. plate the radishes with more parmesan and parlsey on top.

  7. to make the garlic aioli, put all the ingredients in the food processor. squeeze the roasted garlic out of the shells and into the processor. blend it all for a minute until smooth and then top with more black pepper.
