Chicken Milanese Salad

Chicken Milanese, but make it a fresh and bright salad!

Chicken Milanese is BASICALLY chicken cutlets, which are my top 5 favorite foods known to man. It’s served a lot of times with a fresh salad using arugula, veggies and balsamic. This combines it all together, and also adds in some of my other favorite Italian salad elements that will amp up this recipe.

I used my Nonnie’s Chicken Cutlet recipe you can find here. To make this a little healthier, I used gluten free panko breadcrumbs and I air fried the cutlets instead of pan frying them in oil. I love air fryer chicken cutlets when I am craving something satisfying like cutlets, but don’t necessarily want anything fried.

The salad measurements are up for interpretation, since it depends on how much of an ingredient you want in it and how many people you are serving. I will give the measurements for the amount for a serving of one person.

 

Chicken Milanese Salad

ingredients:

  • 1 cup butter lettuce

  • 1 cup arugula

  • 1/4 cup banana peppers, chopped

  • 1/4 cup roasted red peppers, chopped

  • 1/4 cup cucumbers, chopped

  • 1 chicken cutlet, diced (Recipe here)

  • pinch red pepper flakes

  • 1/4 cup basil, chopped

  • 1 tbsp parmesan

  • balsamic dressing

    • 2 tbsp olive oil

    • 1 tbsp balsamic vinegar

    • 1/2 tbsp white wine vinegar

    • 1 tsp honey

    • 1/4 tsp salt

    • 1/4 tsp pepper

directions:

  1. Add all the salad ingredients to a bowl.

  2. Make the dressing by combining the balsamic dressing ingredients and shaking until incorporated.

  3. Serve with balsamic dressing and enjoy!
