Chicken Caesar Salad Sammie

chicken caesar salad is my go-to menu item, especially in the summer. I try to come up with a million and one ways to use the chicken caesar flavors in my meals, so this chicken salad recipe was a no brainer. I basically subbed mayo for caesar dressing and added some other ingredients I knew would taste great in it. this is your basic chicken caesar wrap on steroids (and when I say steriods, I mean super crispy sourdough bread I had in my kitchen).
this chicken salad is whole 30 approved if you use approved caesar dressing (I love primal kitchen) or make your own. it can also be dairy free if you use dairy-free dressing.
Chicken Caesar Salad Sammie
ingredients:
2 toasted pieces sourdough bread
1-2 chicken breasts
1 head of romaine lettuce
1/2 white onion
squeeze of lemon
1/4 cup of your favorite caesar dressing ( i use primal kitchen for dairy free, or bolthouse for low fat)
salt
1 squeeze of lemon
cracked black pepper
1 large tomato
1/2 avocado
garlic powder
onion powder
olive oil
directions:
season the chicken breast with olive oil, cracked black pepper, salt, garlic powder, and onion powder. grill on your grill or grill pan for 10-12 minutes, flipping halfway through.
let the chicken rest before dicing. chop the romaine lettuce and mix in the cubed grill chicken, diced white onion, cracked black pepper, squeeze of lemon, and the caesar dressing.
top your sandwich high with the chicken salad, sliced tomato, and avocado.
