Vodka Sauce Pesto Chicken Parm

A melty, messy chicken parm sandwich with crispy cutlets, tons of vodka sauce, pesto & mozzarella!

Ingredients

  • 1 foot long loaf of bread
  • Chicken Cutlets
  • Vodka Sauce
  • Fresh Mozzarella, sliced
  • Salt
  • Pepper
  • Red pepper flakes
  • Pesto

Instructions

  1. Preheat your oven to 375 F.
  2. Cut your loaf in half long ways and lay on a baking sheet. Assemble by first laying down the chicken cutlets, then pouring on the vodka sauce, then layer on the mozzarella and season with salt, pepper flakes.
  3. Bake for 10-15 minutes, removing the top half of the loaf halfway through toasting. Broil for 2-3 minutes to get a little char on top of the cheese.
  4. Once out of the oven, spread the pesto on the top half of the loaf, put together and cut the sandwich into serving size pieces (depending on how many you are feeding). Enjoy!
